My week as “G.M.”/owner was a little nerve wrecking. I have had previous front of the house classes but nothing that prepared me for that. It is a completely different style of serving and the only thing that I knew how to do before I got in there was carry a tray (which I wasn’t that good at) and refill drinks. It was our professors first semester and I give her all the credit in the world, I never could have done what she did. She has expanded my views past the south east into a more globalized view. I have learned different techniques that I didn’t even know were out there and she has taught not only how to do them but to almost hone them to perfection. People ask me how I like my classes and I honestly don’t even know what to tell them we have become a family in our own over time and you can tell just by the way we interact with each other. Over all it has been an amazing class and I couldn’t have asked for a better professor or classmates.
